Ingredients
250 grams All-purpose flour
1 large egg
1 egg yolk
2 cloves garlic, minced
60 grams microgreens (such as spinach or arugula), blanched and chopped
Salt to taste
Directions
- Prepare the Microgreens:
Blanch the microgreens in boiling water for about 30 seconds. Immediately transfer them to an ice bath to stop the cooking process.
Once cooled, drain and squeeze out excess water. Add them to the food processor. - Make the Dough:
In a food processor, combine the greens whole egg, egg yolk, garlic, and a pinch of salt. Pulse to mix.
Add the flour to the food processor. Pulse until the mixture begins to form a ball. - Roll and Cut the Pasta:
Divide the dough into four pieces. Work with one piece at a time, keeping the others covered.
Flatten the dough into a rectangle shape, then pass it through a pasta machine, starting with the widest setting. Fold the dough in half and pass it through again. Repeat this process, reducing the setting each time, until you reach the desired thickness.
Cut the pasta sheets into your preferred shape using a knife or pasta cutter. - Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta for 2-3 minutes, or until al dente.
Drain the pasta and serve with your favorite sauce. - Note: This homemade pasta dough, enriched with the goodness of microgreens, offers a unique twist on a classic dish.
